That crisp Fall air is rolling in here in the Pacific Northwest and I’ve been craving comfort food!
Growing up my mom used to make stuffed peppers pretty much weekly as they were a fan favorite. I always associate stuffed peppers with coming home after basketball practice with a huge appetite on a cold winter day. I love my mother but hey, they were definitely not the healthiest option (sorry mom) so in the past few years I have made some ingredient swaps to make it a bit healthier but still just as much delicious!
