I’m calling this COVID CURRY – you know, the curry you make with whatever you have in your pantry. 🤷🏻♀️ Okay, probably not funny, but hey, I need a chuckle every now and then.
I had all inspiration to make a fancy curry yesterday but that got shot down when I realized I only had a few ingredients. So here she is and honestly, this turned out to be one of the best curries I have ever had and it was SO SIMPLE!
One of the reasons I love curry is for its amazing anti-inflammatory benefits, digestive support, and immune boosters! That ginger and turmeric are powerhouses of nutrients.They are my two favorite spices, enough so I make a point to get them in everyday whether it’s in tea form or just throwing it in a dressing or even in my eggs.
